SO you have invited half the world to your forthcoming barbecue and want to offer something a little more sophisticated than cans of beer and a box of wine!

Well here’s the answer – make this super, feel good raspberry punch.

It’s like sunshine in a glass, and gives you the feeling of welcoming friends with goodwill - in the same way as having people round at Christmas.

Ingredients (serves four)
500ml red wine
150g caster sugar
400ml water
1 cinnamon stick
1 star anise
Zest of 2 oranges
12 basil stalks
200g raspberries
Garnish
8 fresh basil leaves

Method
Place the red wine in a pan and bring to the boil.
Simmer for about 20 minutes to reduce by three quarters.
Add the sugar, water, spices, zest and basil stalks.
Return to the boil and simmer for five minutes.
Remove from the heat, pour into another container, and chill.
To Serve: strain the chilled punch through a fine sieve into a jug.
Place a few raspberries and one or two basil leaves in the base of each glass before pouring in the punch.

It is hard to imagine how this very exotic-sounding punch must taste...with its combination of anise, basil and rasberries. But I'm looking forward to giving it a try.
