Plenty of pastry in Wigan
A THREE-course pie dinner must take a lot of pastry. But that's just one part of tomorrow's pie-fest in Wigan (October 8), hosted by Lancashire chef Tom Bridge.
To celebrate Wigan's second annual Food And Drink Festival, Bridge is also presenting a special Victorian three-layer cheese pie, which takes seven-and-a-half hours to prepare and cook.
The three-course pie dinner will consist of a Lancashire tarlet to start; then a local game, white onion and thyme pie for main course; finishing with a blackberry and meringue pie.
"Wigan is moving forward when it comes to food and drink, but we haven't lost touch with our culinary heritage," says Keith Bergman, of festival organiser Wigan Leisure And Culture Trust.
"This is a day dedicated to the humble pie - but with a difference. It's all very, very unique with the emphasis on quality and creativity."
Wigan Outdoor Market Kitchen Theatre will run until Saturday October 11.
